Wednesday January 26

Last night I made my good old standby Chicken Pot Pies!  So why would I waste blog space telling you I made the same old thing yet again, well you are right, but I have a twist to the regular filling inside the pie. J

OK you can add any veggies you have to the filling.  I had broccoli that needed to be cooked and added it to the filling.  You can also add squash or a zucchini that needs to be cooked or tossed.  You can always make a big pot of the filling and then freeze the filling to use at a later date.   I do this and freeze the filling in small containers which I use for just the one night serving. 

Most kids eat chicken pot pie.  This is a good way to introduce veggies that they might not really like or a new veggie to them.

BeanieOhooos!

Today I made what I am calling BeanieOhooos!  I took a tortia shell and cut it with the pie cutter and placed in each well.  I added a spoonfull of refried beans in to each shell.  I then toped with cheese.  Closed the machine and let bake for 8 minutes.  I then put salsa and sourcream on top.

This would also be good with beef and beans.   Great snack for the kids or a party.  You can serve refried beans without a plate and a fork.  I was able just to pick these up and eat them. 

We had snow again today!  I do not know what is up with this crazy weather!

Tuesday January 18

I am so sorry for not posting everyday like I was.  I have had too much going on lately.  Between snow days, missing work, back to work, start of a new term and my poor cat it has just been too much.  (Cat had surgery yesterday and is doing much better)

I am still keeping with my resolution of using my machine 5 times a week.  This weekend I made cinnamon buns twice and shrimp rolls on Saturday. I hope his week will be better and I can post more.  

I was asked again from some friends where to buy the Babycakes Machine, so I am reposting the information again.

The Daily Grommet sells the machine for the same price that the stores do.   And the people that work at the Daily Grommet are GREAT!!!!!

Tuesday – Another Snow day Really???

Can you believe another snow day!  Today I did really nothing.  I made breakfast last really brunch.  Then we had soup and pigs in a blanket for dinner. 

My sons had another fun day playing in the snow.  The cat and I sat on the couch most of the day watching TV.  I love to cuddle with her.

Well as it stands now I will be going to work tomorrow.  I have enjoyed my long weekend.

Monday Snow day!

Well woke up this morning to an unusual morning, SNOW SNOW and more SNOW.  We got 6 inches of snow here at the beach.  Very strange weather. 

So snice I did not work today I made cinnamon buns for breakfast.  I made cookies after dinner. 

Not sure about tomorrow.  I do know we have a two hour delay at work, but the roads are all ice and I am scared to drive in ice.  We are to get more snow and sleet tonight.  I am ready for summer!  I have seen enough snow and enough winter weather.

Cinnamon Rolls – with Pecans!

Take your pre-packaged cinnamon rolls and cut into pieces.  I then rolled the pieces in crushed pecans.  Mash a few of the pieces together and put into each well.  Cook for 7 to 8 minutes.  The pre-packaged cinnamon rolls come with iceing.  I then iced each bun.

Lazy Day Saturday

Not much to post about today.  Just a Lazy day.  Watching Lifetime movies all day curled up with the cat.  Did get a visit from our neighbors.  Seeing them always brightens my day.  I love them.  I am so blessed not only do they live next door they are true friends.

Finally Friday!!!!

OK made shrimp rolls again tonight.  My chilren had not seen them nor had they tasted them.  I did not cover the filling with the wrapper tonight I just let is sticking out and it crisped up very nicely.  My son enjoyed them.  He said they were just like egg rolls at the chinese take-out.    I will make them this way from now on.  Also if you let the mix stay in the fridge overnight it does make for a more flavorful shrimp roll.  (maybe roll is not a good thing to call them, maybe shrimp nests? – LOL)

I also made snickerdoodle cookies and chololate chip cookies tonight.  They were both great!

My New Shrimp Rolls

True test of whether or not my creation is a hit, I take it to my office.  I brought in the shrimp rolls today.  I made a batch before I left for work this morning.  Everyone ate them and took seconds.  Sooooooo Besides making me smile from ear to ear, I know the recipe was a hit.  

What new to make? What new to make?  Still thinking of new ideas.

Shrimp Rolls baked not Fried!

2 cup of coleslaw mix
15 Large/Jumbo cooked shrimp
1/8 teaspoon Ginger Powder - If you like ginger you might want to add a little more
1/8 teaspoon Garlic Powder - again if you like garlic you might want to add a little more
1 tablespoon Low Sodium Soy Sauce
Pepper to taste
24 Wonton Wrappers


Cut your shrip into small pieces. 

In a bowl mix coleslaw mix, shrimp, ginger powder, garlic powder, soy sauce and pepper.

Spray each well with non-stick cooking spray, place a wonton in each well.  Spoon in your mix into the middle of the wrapper.  Fold wonton wrapper tops over the mix and bake in your machine for 12 minutes.

Well GUESS WHAT?? Give up? For those of your who know me, you know when I have an idea in my mind I must see if it works now because I cannot wait!!! 

Well in my mind I was thinking, how would I make shrimp rolls?  Could I make them in my Babycakes machine?  Well . . . . .  YES!!!!!!!!!!!!!!!! They can be made in the machine and they are WONDERFUL!!!!!!!!!!!!

Cookie day Wednesday!

Like I said yesterday I did not use my Babycakes Machine at all last night.  I was reading another bloggers page and she made some wonderful looking and I know great tasting cookies so of course now I want cookies. 

Tonight I am going to make cookies because I have Snicker doodle dough and Toll House Chocolate Chip dough.  Like I have said before this works for me because the dough is in tubs which keep in the fridge for up to 6 months, this is great when I just want to make a small batch of cookies. 

Still keeping with my goal – LOL  

I have a new recipe in my head that I want to make this weekend, so we will see if it works.  Keep fingers crossed!  Like always if it works I will post the food item and how to make it here, facebook and the Daily Grommet.  (Little Hint for what is in my head – It is an item I get at my favorite take out place!)

Totally Tuesday!

Well my “New Year Resolution” is to use my Babycakes machine at least 5 times a week.  So far I am doing well with this! 

Sunday night I made the cupcakes for the office.  Monday I made cinnamon buns for breakfast and rolls for dinner last night.  Tonight we are having hamburgers so I will not be making any minis today, but with it being only Tuesday I am ok giving my pink baby a rest. LOL 

I do want to stress the ease of using this machine instead of the oven.  Last night the rolls took 14 min in my maker to cook.  That is open pack, cut into pieces, spray each well with non-stick cooking spray and put dough in each well, plug in machine set timer on microwave and go about my business. 

If I had done them in the oven, I would have had to pre-heat the oven then bake the rolls and then wait for the oven to cool again.  That is just too much and the amount of electricity used?  No way.

Monday! Back to work January 3

I have gone ahead and posted the recipes for things I make in my babycakes machine.  I thought it might be easier to find what you are looking for if I just made a new post for each one.  Hope this helps some of you.  Please post what you are making!  I cannot wait to see what new things we are making in our machines.

Calzones!!!!!!!!!!!!

Packaged pizza dough rolled out very thin.
Cut pizza dough with small side of pie cutter, and large side of pie cutter – YOU will need a top and a bottom crust.

Mixture for inside of Calzones

1 cup Ricotta cheese,
1 cup shredded mozzarella cheese,

Mix well

If you want to add additional toppings like Pepperoni, Sausage, any topping you may want. Now is the time to get them together (I put only cheese in mine – maybe some broccoli if I have some that needs to be cooked)

Put bottom piece of pizza dough into each well.  Fill with cheese mixture and top with top crust.  Cook for 10 minutes.

If you are using a topping like pepperoni I fill mine this way – bottom crust,  pepperoni slice cheese mixture pepperoni slice then top crust and cook for 10 minutes.   


I served with sauce. Now you could put anything inside the calzones, ham, sausage veggies. So many things. They were wonderful!!! Yes they look like muffins but there really is cheese inside!


Pecan Pie with readymade crust

Pecan Pie with readymade crust.

For crust –

unroll store bought pie shell and cut with your large bottom crust cutter.  You will not be using the small top crust for these because you will not have a top crust.  Place a round in each well and fill with mixture.

For pecan mixture –

2 eggs,
1 and 1/2 cup Brown sugar,
2 tablespoons melted butter,
1/2 pinch of salt,
1/2 teaspoon vanilla,
1 cup of pecans.

Mix well and put into pie crusts. Cook for 10 min (Note Cooking time difference from homemade vs store bought crust.  And as always spray with non-stick cooking spray)

For crust –

1/2 cup butter,
3 oz cream cheese
1 cup of all purpose flour.

make into balls and form in the well to make a shell.

For pecan mixture –

2 eggs,
1 and 1/2 cup Brown sugar,
2 tablespoons melted butter,
1/2 pinch of salt,
1/2 teaspoon vanilla,
1 cup of peacans.

Mix well and put into shell cups. Cook for 14 min.

Garlic Rolls or Garlic Knots

1 can of French Bread.

Cut the tube of dough into 1/2 inch pieces. Then cut them in half again. Set aside

Mix 1 large garlic clove,
1/4 teaspoon salt
1/4 cup of olive oil.
1 tablespoon Parsley

Press the garlic and mash with the salt to form a paste like. Then add the oil and parsley and garlic paste mix well.   Put the dough in each well. Brush oil mixture on top and bake for 8 minutes. Brush with oil again and cook 2 min.  (Even though you are brushing the rolls with the garlic oil I STILL spray non-cook cooking spray in each well first)


Cheesey Potatoes!

1 package shredded potatoes,
1 egg slightly mixed,
1/2 teaspoon salt,
1/4 teaspoon pepper-

Mix well with your hands. Spoon into each well. Cook 19 min. Top with cheese and cook for 2 minutes. Serve. I did put sourcream on mine.


Cinnamon Buns!

Package of cinnamon rolls. Open cinnamon roll package and cut each bun in half. Place the half in each well and cook for 7min. Thay taste GREAT!!!!!!!!!!!  (Spray each well and top well with non-stick cooking spray)


Corn Muffins

1 box of Jiffy corn muffin mix

Mix just like the box says to.  Cook for 7 minutes for perfict muffins

Corn Muffins with Onion

‎1 box of Jiffy corn muffin mix
1 can of french fried onion like the ones that are on green bean casserole.

Mix acourding to the box of muffin mix and add in your onions

Cook for 7

Corn Muffins with Jalapenos and Cheese

1 box Jiffy corn muffin mix
¾ cup of cheeder cheese
4 tablespoons jalapenos

Mix acourding to box of muffin mix and add jalapenos and cheese.  Cook for 8 minutes

Mini Cheesecakes topped with Blueberries

1 package of vanilla wafers (11oz),
2 (8oz) packages cream cheese,
3/4 cuo white sugar, 2 eggs,
1 teaspoon vanilla extract,
1 (21 oz) can of pie filling.

Crush vanilla wafers and set aside.

Mix cream cheese, sugar, vanilla, eggs until light and fluffy. put paper cups into each well. put 1 teaspoon of vanilla wafer in the cup, top with cream cheese mix and cook for 15 minutes in cupcake maker.

Take out and let cool, top with pie filling.

Crab Rangoons Baked not Fried!

1 package of crab meat
4 oz chream cheese
2 green onions sliced think
¼ cup light mayonaze

24 Wonton Wrappers

Mix crab meat, cream cheese, green onions and mayonaze.  Put a wonton wrapper in each well.  Fill with crab meat mixture and bake for 13 minutes.

Cookie Dough Cookies

Using tub of dough you can also make cookies in your maker.  Put a teaspoon size amount of dough in each well.  Bake for 8 to 10 minutes.  I do check my cookies evry 3 minutes because you do not want them to burn.

Chololote Chip, Snickerdoodle and sugar cookie dough works GREAT.

Pumpkin Gooey Butter Cakes

Crust:

1 box of yellow cake mix
1 stick melted butter
1 egg

Mix well.  You will have a dough.  Make small balls about the size of a large greap

Filling:

1 8oz Cream Cheese
1 15oz can of Pumpkin
3 eggs
1 teaspoon vanilla
1 stick of melted butter
1 16oz box powered sugar
1 teaspoon cinnimon
1 teaspoon nutmeg

Mix well.

Flatten your dough ball and put into the well.  Top with your filling mix.  Cook this for 10 minutes and chek with a toothpick.  You want the toothpick to come out clean.

Spray with non-stick cooking spray

Mini Chicken Pot Pies

1 to 2 cups Cooked Chicken
1 can of Cream of Chicken Soup with herbs
½ can potatoes (diced)
½ can of peas
½ can of corn
salt and pepper to taste
refridgerated pie crust

Cut my top and bottom halves with your pie cutter. Make sure you have both a top crust and a bottom crust.  Put the bottom cust in the well.  Fill with your Chicken mixture and top with your top crust.  I take a egg white and wisk it a bit then bursh the egg wash on the top crust to get a browner crust.  Cook this for 9 minutes and get the perfect chicken pot pies.  You can also use Turkey instead of Chicken just be sure chicken and turkey is fully cooked before making your pies.

Spray each well with non-stick cooking spray

Mini Meatloafs!



You will need :
1 lb of ground beef
1 egg
1 cup shredded mexican cheese 4 cheese blend
1/2 cup of chopped onion
1/2 cup of salsa
12 finely crushed saltine crackers.

Mix everything together and make small round meatloafs. Place one in each well. Cook for 10 min. open the maker and top each meatloaf with cheese and close make cook for another 2 min

I make peas and mashed potatoes to go with the mini meatloafs.


Note I spray my machine with non-stick cooking spray before I made anything.

My Babycakes Machine!!!!!

Hi my name is Juli and I LOVE making stuff in my cupcake maker.  My new mission in life is to make all I can in my cupcake machine.  I range from deserts to dinners!  I enjoy cooking in the maker because it is well, fun!  I post recipes and photos in several places.   My facebook account is one, the Daily Grommet is another and now here on this blog page.   Here are the links to the places where I post.
