BeanieOhooos!

Today I made what I am calling BeanieOhooos!  I took a tortia shell and cut it with the pie cutter and placed in each well.  I added a spoonfull of refried beans in to each shell.  I then toped with cheese.  Closed the machine and let bake for 8 minutes.  I then put salsa and sourcream on top.

This would also be good with beef and beans.   Great snack for the kids or a party.  You can serve refried beans without a plate and a fork.  I was able just to pick these up and eat them.

We had snow again today!  I do not know what is up with this crazy weather!

As always, I wish you Happy Cooking!  Have a wonderful day and remember Minis make people smile. Everyday should be a “Mini-riffic” day!

  1. The salsa on these I also make this myself. It is very easy and takes only a minute to make. Take 1 can of crushed tomatoes, add 2 tablespoons of jalapienos, ¼ teaspoon garlic powder, ¼ teaspoon salt, cilantro and ½ of a chopped onion. Mix well and place in the refridgerator. Best salsa!

  2. I want to make these for an upcoming party! What kind of tortillas did you use? Did they crisp up nicely? Thanks!

  3. Hi Dina. The tortillas I used were just flour ones that come in a big package. The shells were firm but not chrip like a taco salad shell. I was able to hold the shell and bite. The shell did not fall apart nor did the bean filling fall out.
